This week we have lots of good comfort food for winter. I am obsessed with this menu!
We’re kicking things off with these slow roasted sweet potatoes with spicy garlic chickpeas for meatless monday! This is one of the most popular recipes on the blog and just so flavorful. It comes with a blue cheese sauce too, but you can always skip it. You can roast the sweet potatoes ahead of time and then heat them right before eating!
Next up: these honey chipotle chicken bowls. A major oldie but goodie. These have a ton of flavor too. You can make the chicken and quinoa ahead of time and assemble when you’re ready to eat. This also makes for a great lunch.
Sweet potato ginger soup for Wednesday win, because it’s COLD here this week. And if you’re really feeling it, make some brown butter garlic knots to go with it. The soup comes together so quickly (you can even use leftover roasted sweet potatoes from Monday’s meal) and you can prep the dough ahead of time too.
We have been loving salmon burgers, so try them this week with my green goddess sauce. The sauce stays great in the fridge for a few days too. The salmon burgers can be mixed up ahead of time and cooked right before eating.
Finally, tortilla eggs! This is an embarrassingly easy yet ridiculously flavorful recipe. It’s great for breakfast, but if you love breakfast for dinner, this is such a fantastic option. It’s very satisfying too. Add on a side of roasted veggies and it’s a great meal. Kids love this one!
