Staying at home, week four!
This week it ended up being nice outside enough that we could be outside a bunch. Total mood improvement.
One crazy thing I’ve realized is that I have NEVER noticed spring blooms before like I have this year. Maybe it’s because I have nothing else on my mind – like we aren’t rushing around to go places – so when we get in the car to go for a drive, all I can see are blooms everywhere! These ones are actually outside Max’s window and he was so excited to tell me about them.
She kills me.
I made these cheeseburger pizza, exclusively out of leftover ingredients. Minus the bacon.
Sunshine!
Eddie is on a popcorn kick. He makes it multiple times a week at night and I always say I don’t want it because I don’t love popcorn. Then I take one bite and can’t stop and continuously steal from his bowl.
I made the kids a mug cake!
And they did lots of coloring/worksheets/tracing/ etc.
I’ve been working on a sourdough starter (yes, like the rest of the internet) for over eight days now. It won’t rise AT ALL. I’ve tried starters before and the same thing has happened. I’ve tried whole wheat and all purpose (no rye available, though I did order some that is coming later next week), different ratios of feeding, warm water, distilled and bottled water, keeping the starter in the oven with the light on, keeping it on the counter… I AM LOSING MY MIND over it. I just want to be able to bake sourdough.
This herb garden bed is trashed from winter but the chives have arrived!
This dish doesn’t look special but oh my gosh, let me tell you – it’s incredible. It’s a recipe from my next book and after doing multiple read throughs of my manuscript before turning it in, I just couldn’t stop thinking about this. So I made it one night as a side dish to grilled chicken. Eddie couldn’t stop eating it right out of the pan. It’s unreal and I can’t wait until you get your hands on the book!
We did get taco takeout!
It included street corn nachos. Eh. I could make them better. I will make them better, in fact! Recipe to come.
Cutest girl who demands wearing either her snow boots or her uggs, even when it’s 60 degrees out. Pretty sure they are also on the wrong feet.
I made a big batch of homemade mac and cheese and gave it away. This article by the kitchn is great regarding cooking for other people right now.
Oh I also made homemade breadcrumbs. I had a loaf of bread that honestly just didn’t taste great and was getting stale. Pulsed them in the food processor then toasted for 15ish minutes at 350 degrees.
We finished decorating for Easter too (like six weeks later than I normally would?) and it made me feel a million times happier! So glad I did.
The kids are loving bunny ears right now.
Eggs for life. My most favorite food. I made Eddie a breakfast sandwich and cooked these eggs in some bacon grease. Oh my.
I made a big pan of my favorite roasted broccoli too! I realized why I make this so often. It’s one food I’m always in the mood for. Kind of like pizza. But with broccoli. This ensures I will eat some vegetables at lunch this week!
Filled out the April calendar too. It’s fine. I’m fine.
And Max brought me flowers which was just the cutest thing.
It was a good week! As good as can be expected. How was yours?
