Finishing off summer strong with lots of delicious meals!
This week is loaded with some of my favorite salads, pasta and delish leftovers!
Start the week off with the caramelized onion and burst tomato pasta. It is so flavorful and really soaks up the last of the summer goodness. I suggest make a double batch, so you can have leftovers with meatballs later in the week.
Chicken taco soup is up next! Perfect for taco tuesday, this is a huge hit with the cheese quesadilla croutons. The leftovers are amazing too – use them up for lunch!
Before the good berries are really gone for the year, make this triple berry crunch salad. The spiced chickpeas keep the salad very satisfying and the vinaigrette is incredible.
Coconut curry pork meatballs are up next! Serve over jasmine rice. If you don’t have pork, you can use ground turkey, chicken or beef!
Make a batch of my chicken parmesan meatballs. Use up any leftover pasta from earlier in the week for serving, or make sandwiches. If you have a bunch, these freeze well too.
I love a good caesar salad and this blackened shrimp caesar salad is everything.
For breakfasts or snacks this week, try a batch of the salted maple granola! It goes with everything. And for lunches, I’m finishing off the season with this smoky chicken salad.
